Mediterranean Couscous Salad


I adapted this recipe from one that I found on Weight Watchers.

5 points per serving.

Ingredients
14 oz fat-free, reduced-sodium chicken broth
1 1/2 cup(s) uncooked couscous
1 cup(s) sweet red pepper(s), diced
1 cup(s) mint leaves, chopped
1/2 cup(s) parsley, chopped
1/2 cup(s) scallion(s), chopped
1/2 cup(s) fresh lemon juice
1 Tbsp Dijon mustard
1 1/2 tsp minced garlic
1/2 tsp black pepper
1 cup(s) reduced-fat feta cheese
1/8 cup(s) olive oil

Instructions

Bring broth to a boil in a medium saucepan; gradually stir in couscous. Remove from heat; cover and let stand 5 minutes. Fluff with a fork.

Combine couscous, bell pepper and next 3 ingredients in a large bowl; stir gently.
Combine lemon juice and next 4 ingredients in a small bowl.

Pour lemon juice mixture over couscous mixture; stir gently. Stir in cheese.

Yield: 6 servings (1 cup serving size)


The measurement for the couscous is the same as one box of the Near East brand. Also, the feta measurement is the same as one 5 oz container of the Athenos brand. So just pour them in, don't dirty up your measuring cups!

I realllllllllly like this. Like a lot. I'm going to have to be careful with this one. :)
