...but I'm gearing up to do some freezer cooking today. I didn't make it to the store last night to stock up, so unfortunately I've got to do that this morning. I'm going to con the husband into going with me (he hates the grocery store!) to get it done faster so I don't get too worn out.
What's cooking?
-meat sauce for spaghetti (2 meals worth)
-taco meat (2 meals worth)
-lasagna (2 meals woth)
-Mexican chicken casserole (2 meals worth - chicken cooking in the crockpot now!)
-Dad's pork chops & rice (3 meals worth)
-crockpot chicken taco soup (3 meals worth - already done!)
-meat loaf muffins (2 meals worth)
-un-stuffed peppers (2 meals worth)
-chicken cordon bleu (2 meals worth)
-meatballs (3 meals worth)
Hopefully I'll be successful and by the end of the day I'll have 23 meals in my freezer so I don't have to worry about dinner so much in the next few weeks.
What's also great is that with the grocery pricebook I've been keeping, I'm able to estimate how much I'll be spending once we get to the grocery store today. Most of the individual meals will have 4 servings, so my calculations put each serving at about $0.92! I think that's great, considering these are all healthy, low-fat, low-calorie, balanced meals that I know we like. My grocery list (and calculations) accounts for the sides (mostly frozen veggies), but not breakfasts, fresh fruits, or milk.
Anyways, I'm excited to take this on today. Wish me luck!

Victoria, I do, for most of them. I will write up a post with the recipes I have written down. Some of them are things I throw together (the Mexican Chicken Casserole for example) and the others are just ground meat and seasoning or canned sauce (tacos, spaghetti sauce).
