So here's what I've got to work with:

Almond Milk
Blue Cheese
Parmesan Cheese
Cheddar Cheese
Sour Cream
Salsa
Blue Corn Tortilla Chips
Frozen Corn (kernels)
Frozen Brussels Sprouts

So, who wants to build some meals for me? I have zero energy right now, and tomorrow looks like it will be packed full of studying/homework. I can manage a trip to the grocery store if I have to, but I think I keep buying too much because I have all this stuff left over...

black beans, peppers, and zucchini simmered with the roma tomatoes and water (if not canned). Add in your fav seasoning (I'd do chipotle, cumin, and red pepper). Serve over brown rice.

white beans and red lentils pair well in crockpot dishes. I'd toss them in with a box of roasted red pepper soup or something similar. Cook on low 3 hours.

Quinoa cooked in orange juice. Toss with goat cheese or feta and barely cooked veggies (so they're still crisp) and chickpeas. Season with garlic, lemon juice, and pepper.

And for extra nutrients, I'd toss a giant handful of kale into any of those dishes, about 2 mins before serving just it wilts.
